I primarily switched to the electric fryer as I was getting tired of spending hours out in the cold (sometimes rain) frying turkeys on Thanksgiving. Here is what I liked about this electric fryer: 1) Safer (no open flame) and you use it indoors (out of the weather and wind). 2) Drain port makes it easy to clean up when you are finished. 3) Built in timer to let you know when to take the turkey out of the fryer (or at least check it). 4) Can cook the same size turkey with less oil. 5) Hot oil remains covered while turkey is frying so no spatter. Propane can go up to 400 degrees. This is important as when adding a room temperature turkey to the fryer the oil temperature is reduced significantly. 2) The electrical cord is ridiculously short and since the cord must come from the front of the unit and proceed to an outlet you are limited on where you can use this fryer. Using an extension cord is not recommended as it will steal power away from the the heating element (and you cannot afford this with this fryer). 3) The heating element is not powerful enough to get the oil back up to 375 degrees after a 14 pound turkey is added. I also cooked wings and found this to be true as well. 4) You must extend the cooking time of the turkey. Do not use the standard formula of 3.5 minutes per pound at 375 degrees. I found that the turkey probably spent most of its cooking time at 250-270 degrees on average. There was no way to get the oil temperature back up to 375 once the meat was added. This was a bit frustrating. 5) If you like the turkey skin to be crisped (like it is in a propane fryer at 375 degrees) then this fryer will disappoint. I found the turkey skin could not crisp when the frying temperature was less than 300 degrees. However, I could not tell any difference in taste between one cooked on propane at the higher 375 degree temperature or the one fried at the lower electric fryer temperature. Lessons learned: The most annoying thing I found was the drop in oil temperature when the turkey was added. I will probably go to a smaller turkey (less than 14 pounds) in the hopes that it will not reduce the temperature of the hot oil as much. I found this quite frustrating because we had to start estimating cooking time extensions and take a lot more meat temperature measurements to make sure the meat was in the correct 165 degree range. Again, the taste was excellent and I have no complaints there. When using propane, since I was using all the oil in the container I just saved the empty container to hold the used oil. Since the electric fryer uses less oil you don't have the empty oil container available. The longer electric cooking time still beats the oven cooking time so it isn't a big detractor. I would recommend this fryer but it is not the same as cooking on propane at the higher temperature.It's performance isn't as advertised The major setback is the heating element doesn't perform as advertised. Even for a relatively small 8 to 10 pound turkey, The heating element isn't capable of maintaining the selected temperature range. I cooked a 9 pound turkey in it. Set the thermostat for 375 in peanut oil. The turkey cooked for 45 minutes and cooked it just fine although it wasn't as brown as expected. The fryer was placed close enough to the 110 V receptacle so that no extension cord was necessary. This receptacle is also on a dedicated circuit with no other load on it. The ambient air temperature was in he high 70s in the garage with no wind. It just isn't capable of high heat and quick temperature recovery. I does a super job on shrimp, and mud bugs. It also has no equal in cooking king crab legs quickly. They should have called it a steamer. I don't now if they make the same fryer with a 220 V element assembly. That would solve the inadequate recovery under load issue. They could and should offer a heating element rated for 220 V. Yes it would be a little more expensive but this is a necessary option for those who want the performance expected (as advertised) for a masterbuilt product. I would have paid a little extra for this option personally. It just isn't the best turkey fryer. I am a little surprised butterball allowed their name to be used on the product. It's still a very nice piece of equipment, just not the best choice for cooking turkeys.I cooked a 14lbs Turkey using a peanut soybean oil mix for 50 minutes.


It toon the oil about 40 minutes to heat up to 375F prior to putting in the bird but everything worked out absolutely perfect with a FANTASTIC taste. I did a 14 hour brine and then injected Mojo prior to frying. I bought the XL version on purpose to cook turkeys less than 15lbs.Everyone loved it and I really can't say enough about this product. The clean-up was quick and extremely easy. Very satisfied.I received it as a Christmas present and could not be happier with it. It heats up in 40 minutes to 375 degrees and pretty much maintains the temp steady. I've cooked several whole 8 lb chickens that turned out fabulous. They were unbelievably juicy and not oily at all. I have also made a variety of fried appetizers such as fried pickles, mushrooms and artichoke hearts. Fun stuff that I normally wouldn't have made.. I have also used it several times to fry my breaded chicken for Chicken Parmigiana. It was really quick and easy. I fry 3-4 thin chicken breasts at a time for 2-3 minutes. They are perfectly cooked with a nice crispness. Draining and cleaning the machine is a very simple and easy process that is well worth the effort. I use the fryer on my outdoor covered patio. I have not had any leakage problems and would definitely use it on my kitchen countertop if I preferred. It does have a shorter cord than most appliances for safety reasons. The cord posed no problems and I would NOT recommend using an extension cord just for safety sake. I would highly recommend this product and look forward to many years of use. But the traditional way of frying a turkey involves a pot of hot oil and an open flame outdoors which is not exactly appealing to some. For this group of people, there is the popular Butterball indoor electric stainless steel turkey fryer. It comes in 2 sizes, the XL and the large electric turkey fryer. It is certified safe for indoor use. The XL turkey deep fryer can accommodate a 20 pound turkey. As for the smaller size fryer, it can easily fit in a 14 pound bird. The design of the turkey cooker with its one piece lid ensures that the hot oil is kept safely inside the inner pot without the danger of the oil boiling over or splattering on the countertop while frying. For frying turkey, you set it to 375 degrees F. When desired temperature is reached, the ready light illuminates. You can now slowly lower in the turkey. Timing has begun. Extra safety controls The machine comes with thermostat temperature control. It maintains a steady temperature up to 375 degrees Fahrenheit. The ready indicator light will light up once required temperature is reached. The indicator will only light up if oil is used. Water and hot oil are dangerous combination. For the turkey to have absolutely crispy skin, the whole bird has to be submerged in the boiling oil. The trick to prevent the cooked turkey from sticking to the basket is to first lower the empty basket into the hot oil to coat it with an oily layer. Then only put in the raw turkey onto the hot oiled basket to lower into the boiling oil. Always lower or raise turkey slowly to prevent sudden agitation of oil. This prevents splattering and severe scalding. One customer commented that if you have a large 20 lb turkey for the large capacity fryer, get it cut into half and fry them separately. They will still turn out superb. The internal temperature should be 165 degrees F (74 degrees Celsius). Before pouring in the oil, make sure the drain valve is properly sealed and closed with the safety cap provided or you might end up with oil all over your work top. Once breast meat is lowered into the hot oil, then you have to reduce the temperature to 325 degrees F and maintain it at this lower temperature for the duration of the cooking process. It is large enough to hold its heat when frying. The food does not become soggy with oil. Easy, efficient clean up. The only drawback I have found is no carrying hand holds. It is big, and most homes don't have counter space to leave it out. This is the second time I have purchased this model. My son had 25 people for Thanksgiving Dinner and we decided to fry the turkey, needless to say it came out great for our first time. The turkey came out juicy and moist and was very flavorful. The turkey was a hit and the rave of the dinner, it was the first thing to be eaten. The only drawback is the cord is very short and has a magnetic connection that has to be kept in place or will fall out. My 13 pound turkey fit perfectly and was really moist and delicious. My skin wasn't crispy but that may have been my fault - will try again, maybe cook a little longer to crisp it more. My son who doesn't like white meat, loved it this year.
